[[U.S. Route 90 in Texas|U.S. Route 90]] runs east-west through the center of Sabinal as Fisher Avenue, leading east 20 miles (32 km) to [[Hondo, Texas|Hondo]] and west 22 miles (35 km) to [[Uvalde, Texas|Uvalde]]. [[Texas State Highway 127]] runs northeast, initially following Center Street, 21 miles (34 km) to intersect [[U.S. Route 83]] in [[Concan, Texas|Concan]]. The closest airport with commercial airline service is [[San Antonio International Airport]], on the north side of [[San Antonio]] 66 miles (106 km) to the east.

As of the [[census]]<ref name="GR2" /> of 2000, there were 1,586 people, 560 households, and 417 families residing in the city. The population density was {{convert|1,336.3|PD/sqmi|PD/km2|sp=us|adj=off}}. There were 655 housing units at an average density of {{convert|551.9|/sqmi|/km2|sp=us|adj=off}}. The racial makeup of the city was 79.51% [[White (U.S. Census)|White]], 0.06% [[African American (U.S. Census)|African American]], 0.19% [[Native American (U.S. Census)|Native American]], 0.06% [[Asian (U.S. Census)|Asian]], 0.06% [[Pacific Islander (U.S. Census)|Pacific Islander]], 16.46% from [[Race (United States Census)|other races]], and 3.66% from two or more races. [[Hispanic (U.S. Census)|Hispanic]] or [[Latino (U.S. Census)|Latino]] of any race were 64.06% of the population.
