The first settlers arrived ''circa'' 1806. The town of Ellicott was established in 1812 from the town of [[Pomfret, New York|Pomfret]] and was one of the first three towns in the county. As such, part of Ellicott was used to form the towns of [[Busti, New York|Busti]] (1823), [[Carroll, New York|Carroll]] (1825), and [[Poland, Chautauqua County, New York|Poland]] (1825), although some territory was later re-annexed to Ellicott from Busti and Carroll.

The city of Jamestown was formed from part of Ellicott in 1886.

The town borders the east end of [[Chautauqua Lake]].

The Southern Tier Expressway ([[Interstate 86 (Pennsylvania–New York)|Interstate 86]] and [[New York State Route 17]]) passes through the town north of Jamestown, with access from exits 11, 12, and 13. [[New York State Route 60]] is a major north-south highway in the town, and [[New York State Route 394]] is an east-west route that parallels the Southern Tier Expressway in the southeast part of the town. [[New York State Route 430]] enters Jamestown from the southwest part of Ellicott.

The population density was {{convert|304.4|PD/sqmi|PD/km2|sp=us|adj=off}}.  There were 4,104 housing units at an average density of {{convert|134.6|/sqmi|/km2|sp=us|adj=off}}.  The racial makeup of the town was 97.69% [[White (U.S. Census)|White]], 0.53% [[African American (U.S. Census)|African American]], 0.26% [[Native American (U.S. Census)|Native American]], 0.57% [[Asian (U.S. Census)|Asian]], 0.26% from [[Race (United States Census)|other races]], and 0.69% from two or more races. [[Hispanic (U.S. Census)|Hispanic]] or [[Latino (U.S. Census)|Latino]] of any race were 1.05% of the population.

There were 3,818 households, out of which 29.1% had children under the age of 18 living with them, 55.3% were [[Marriage|married couples]] living together, 9.0% had a female householder with no husband present, and 32.0% were non-families. 27.4% of all households were made up of individuals, and 14.1% had someone living alone who was 65 years of age or older.  The average household size was 2.38 and the average family size was 2.88.

In the town, the population was spread out, with 23.2% under the age of 18, 6.0% from 18 to 24, 25.2% from 25 to 44, 25.6% from 45 to 64, and 20.0% who were 65 years of age or older.  The median age was 42 years. For every 100 females, there were 92.1 males.  For every 100 females age 18 and over, there were 87.5 males.

The median income for a household in the town was $39,333, and the median income for a family was $47,813. Males had a median income of $39,144 versus $22,481 for females. About 5.8% of families and 8.8% of the population were below the [[poverty line]], including 14.1% of those under age 18 and 5.6% of those age 65 or over.
