This in turn supports a dairy industry responsible for butter and Roquefort cheese{{sfnp|''EB''|1878}} and the [[Appellation d'Origine Contrôlée|appellation-controlled]] cheeses [[Cantal cheese|Cantal]], [[Salers cheese|Salers]], and [[Bleu d'Auvergne]]. By then, it had been connected to both the [[Orleans Railway|Orleans]] and [[Southern Railway (France)|Midi]] [[history of rail transport in France|railways]].{{sfnp|''EB''|1911}} Traditionally, many Cantalians roamed France during the year plying humble trades{{sfnp|''EB''|1878}}{{sfnp|''EB''|1911}} but now the area's relative lack of industry and development permits tourism.
