As of the [[2020 United States census]], there were 28,555 people, 11,030 households, and 7,338 families residing in the city. In 2000, there were 11,756 households, out of which 36.6% had children under the age of 18 living with them, 45.1% were married couples living together, 20.5% had a female householder with no husband present, and 29.1% were non-families. 25.2% of all households were made up of individuals, and 10.8% had someone living alone who was 65 years of age or older. The average household size was 2.70 and the average family size was 3.24. In the city, the population was spread out, with 29.8% under the age of 18, 9.7% from 18 to 24, 26.8% from 25 to 44, 20.4% from 45 to 64, and 13.3% who were 65 years of age or older. The median age was 34 years. For every 100 females, there were 87.8 males. For every 100 females age 18 and over, there were 83.6 males.

New Iberia had a racial and ethnic makeup of 51.6% [[non-Hispanic whites]], 40.7% [[African Americans|Blacks or African Americans]], 0.1% [[Native Americans in the United States|American Indians and Alaska Natives]], 1.4% [[Asian Americans|Asian]], 2.1% some other race, and 2.1% [[multiracial Americans]].
