As of the [[census]] of 2000, 2,085 people, 796 households, and 581 families were residing in the county. The [[population density]] was {{convert|2|/mi2|/km2|disp=preunit|people&nbsp;|people|}}. The 945 housing units had an average density of {{convert|1|/mi2|/km2|}}. The [[Race (United States Census)|racial makeup]] of the county was 97.31% [[White American|White]], 0.91% [[Black American|Black]] or [[African American]], 0.24% [[Native Americans in the United States|Native American]], 0.48% from other races, and 1.06% from [[Multiracial|two or more races]]. [[Hispanic]]s or [[Hispanic and Latino Americans|Latino]]s of any race were 2.69% of the population.

Of the 796 [[household]]s,  34.7% had children under 18 living with them, 65.1% were married couples living together, 4.4% had a female householder with no husband present, and 27.0% were not families. About 24.7% of all households were made up of individuals, and 14.2% had someone living alone who was 65 or older. The average household size was 2.58 and the average family size was 3.09.

In the county, the age distribution was 29.0% under 18, 4.7% from 18 to 24, 25.2% from 25 to 44, 22.1% from 45 to 64, and 19.0% who were 65 or older. The median age was 40 years. For every 100 females, there were 97.3 males. For every 100 females 18 and over, there were 96.9 males.
