They go to great lengths to minimise any harm to any living organism. Most Jains are lacto-vegetarians, but more devout Jains do not eat root vegetables, because they believe that root vegetables contain many more microorganisms as compared to other vegetables, and that, by eating them, violence against these microorganisms is inevitable. They therefore prefer eating beans and fruits, whose cultivation involves killing fewer microorganisms.
