===Cuisine=== Springfield's mosaic of ethnic communities have long played a role in its culinary institutions, with many newer smaller restaurants and several decades-old establishments in its downtown.<ref name="zvastudy"/> Among its oldest institutions are Smith's Billiards, founded in 1902, which serves Theodore's Blues, Booze, & BBQ, a neighboring barbecue and music venue since 1979, recognized as the "Best Blues Club in the Country" in 2004 by the [[Blues Foundation]].
