== Etymology == The first documented evidence of the term es is from 1820, in the patriotic song "La Chicha," considered the first Peruvian national anthem. According to the Royal Spanish Academy, the word might have the same etymology as the Spanish term es, which derives from Mozarabic mxi, in turn descending from Andalusian Arabic xaa-Latn, which also derives from Classical Arabic ar-Latn (ar, meaning meat cooked in vinegar).<ref>Hans Wehr, Arabic–English Dictionary. Otto Harrassowitz KG: 1994.
